Recipe: Chicken Afritada

My Hon's version of Chicken Afritada

Since I am working at night again, my wife and I decided to cook chicken afritada. It’s a chicken (sometimes pork) simmered in tomato sauce. This dish is also served with green peas in since we weren’t able to get one, we just decided to do one without it which is still tastes good!


Ingredients 
3 Cloves of Garlic, chopped
Small Ginger, sliced into strips
1 medium Onion, sliced
1 large Green Bell Pepper, sliced into cubes
5 pieces Smoked Frankfurters or regular hotdogs, sliced
½ kilo of Chicken, cut into serving pieces
1 large Potato, cubed
¼ cup Raisins
1 large carrot, cubed
Salt
Ground pepper
Fish Sauce
¾ cup Tomato Puree
A dash of Chili Sauce or to your liking
1 Chicken Cube
1 cup Water
Oil
Medium size bay leaf

Instructions
  1. Heat up pan, do not pour oil in yet
  2. Once heated, add in the chicken pieces and stir
  3. Add in about ½ cup of water to boil the chicken
  4. Once the water has evaporated add in the oil. There are instances where the chicken used produces enough fat to use.
  5. Set aside the chicken
  6. Add in ginger and sauté followed by the garlic and then the onion
  7. Put the chicken back in, then the bay leaf, stir for a while then add in the remaining water and the tomato puree
  8. Then add in the chicken cube
  9. Then add in the carrots followed by the potatoes
  10. Cover and Simmer until the carrots and potatoes are cooked
  11. Once cooked, add in the green bell pepper
  12. Then season with fish sauce, pepper and salt then cook for about 2-3 minutes more
  13. Serve with steamed rice and Enjoy!
